Making Bread (No Knead Challah)

So, there is this braid bread that some girls I grew up with used to make during the holidays.  When I got grown, one of the girls lived not to far from me in Atlanta and would have me over for holiday celebrations.  Now, growing up, we called this braid bread: as young adults, one of her friends dubbed it sex bread, saying that it was better than sex. Now, we were supposed to do a recipe swap where I got this recipe, but we fell out right after I took my turn on the swap. 


So I have tasked myself with finding this recipe. It is a slightly sweet bread with an egg wash on top.  I remember the girls did not have a stand mixer and did a lot of kneading.  (I don't knead!)  So I found a recipe for daisy bread on pinterest, and I also found a no knead challah bread.  Both are very easy recipes that I think should do the trick.  (The recipes are linked below.) I used the no-knead challah bread version and put it in a loaf pan.  (I really wanted to use it for French toast, but it is so good!)

Can't Believe It's Oven Fried Chicken

When I was a child, my grandmother cooked chicken so many ways and she taught me all of them, but today we are making fried chicken.  The first way I learned to make chicken was in a pressure cooker.  It was simple-- put the chicken in the basket, lower the basket, turn the knob, and wait for the bell to ding.  Perfectly crispy and juicy chicken every time.  


The second way I learned to fry chicken was to deep fry it on the stove. (I think the pressure cooker broke because I never saw it again.) Here is a tip: Watch the bubbles. When you first put the chicken in, the bubbles are really large.  As the chicken cooks, the bubbles get smaller.  That helps you tell which pieces are done.  It think it has something to do with the amount of water coming out of the chicken.

Finally, I learned to oven fry chicken.  I have been oven frying chicken since I was about 13 years old.  It is my preferred method of cooking chicken because I love fried chicken but I HATE (can't emphasize that enough) cleaning up grease.  I hate cleaning the splatters! I hate cleaning the pot!  I hate trying to find newspaper so I can throw the grease away!  I hate the guilt of dumping it down the drain!  I HATE CLEANING UP AFTER FRYING!!!

So anywho, I have several recipes for wing sauces on this blog.  I put them here to save until I can try them out.  Since I missed the chance to join my friend in going out for wings the last few weeks, I decided that there was no better time to try one out.  But again, I don't like frying; and besides, I am supposed to be trying to lose weight.  Fried chicken is not a part of my lifestyle change.  

So today, I oven fried some chicken.  Here is the way I got it perfectly crispy and golden brown.

I will be back with the seasoning mix I used.  My mother mixed it up in much the same way as my grandmother did.  I know it is salt, pepper, seasoning salt, and paprika.  I just don't know how much of each.  I do know it is about half seasoning salt.  The paprika makes the chicken that perfect golden brown you see in the picture!

I thawed the chicken in a bit of salt water.  

Then I sprinkled the mixed seasonings generously over the chicken.  And I do mean generously!  Leave no chicken not red!!

Then I poured olive oil over the seasoned chicken, coating it lightly.

Then I breaded the chicken in the following:
5 T. flour
3 T. panko bread crumbs
2 T. Parmesan cheese
Here is a tip for breading: Put the breading ingredients in a bag and shake to mix them.  Then, put the chicken in the mixed breading in the bag.  My grandmother used to bread her chicken in doubled grocery bags.  Works great and is very economical!

I put the chicken in a greased pan and sprayed the top of the chicken with cooking spray.

I baked the chicken for 35 minutes at 425 degrees F.  

Now we all know ovens vary so you may need to adjust the cook time, but this should get you started.

Making Almond Milk or Coconut Milk

Sometimes you just want to try something new!  I remember trying coconut milk ice cream sandwiches and liking them.  But I know that the processed crap that passes for coconut milk is probably worse than the organic milk we buy so I began to wonder how hard it is to make.  Turns out it isn't hard at all and a natural by product happens to be coconut flour!  Who would have thunk?  

Anywho, apparently, almond milk is made in much the same manner, go figure!  So, here are the recipes, I will be trying the coconut milk recipe first as I want to make my coconut pineapple piña colada wings and it seems to be more suited for use in ice cream.  (For more ice cream recipes, type ice cream in the search box on this blog.  It really is a shame and a bit embarrassing about the ice cream posts, but just in case you and ice cream have the same star crossed love affair...)



It is really quite easy if you have a blender or a food processor.

1 cup dried unsweetened coconut flakes or raw almonds
2 cups water 

Soak the coconuts or almonds to soften them.  The coconuts will need to soak 2 hours and the almonds will need to soak 8 to 12 hours.

Blend well.  This means 3 to 5 minutes in a blender or 2 minutes in a food processor. 

FOR ALMONDS: This will yield a very thick almond paste.  You will likely want to add about 6 more cups of water to make the almond milk into milk.

FOR COCONUTS: You may want to add 4 teaspoons of sugar if you would like sweetened coconut milk.  (Perhaps for a recipe such as the wings linked above.)


Pour through a cheese cloth* and squeeze to strain.  (NOTE TO SELF: Keep the pulp!)

Refrigerate up to 5 days.  You can boil it to make it last longer if you want.

NOW, THE PULP CAN BE USED TO MAKE FLOUR.
Simply spread on a baking sheet (which can be lined with parchment paper) and put it in the oven on the lowest setting until it dries out.  Blend it until it is finer, and voila! Flour!

P.S. I have read that you can make milk twice from your coconut pulp.  So before making coconut flour, use your pulp to make milk again.  This time use a 2:3 ration of coconut to water.

*Cheese cloth can also be used.  I have also seen bloggers use a cotton pillow case and a 18-24 inch square of 100 percent polyester Swiss voile, which is what I recommend.


Now you can use your milks and flours to make stuff!!  Be sure to use recipes that have been tried. Unless you have time, money, and the patience to experiment, in which case, please send me the recipes you make!

Almond flour is good for breading your meats for frying as it less absorbent than the coconut flour.  Your coconut flour is better for baking things like breads, pancakes, and cakes.  When you bake with coconut flour, you will inevitably have a higher protein food as you need to use more eggs than with wheat flour.

I don't know what xantham gum is, but I plan on putting a banana in to thicken and sweeten. Remember that it needs to be slightly sweeter when warm for it to taste right cold!

Ice Cream Recipes (a collection of links)

Anyone who knows me knows that I feel a certain affection for ice cream!  However, I am trying to become more cognizant of what is in my food.  I want to have more control over what goes into my body, even if it isn't healthy.  Additionally, having to prepare these unhealthy treats may deter me from snacking on them so mindlessly.  I also will have more control over my portions as well!  All the more reason to make your stuff at home!

2 Cups Sugar
2 Envelopes Unflavored Gelatin
8 Cups Lactaid Milk-(We use the one in the 
    blue carton) 
6 Beaten Eggs
3 Tablespoons Vanilla

In  a large saucepan combine sugar and gelatin.  Stir in 6 cups of milk.  Cook and stir over medium heat until mixture almost boils and sugar dissolves.  Stir about 1 cup of the hot mixture into beaten eggs; return all to saucepan.  Cook and stir for 2 minutes more.  DO NOT BOIL or eggs will cook.  Stir in the 2 cups of lactaid and vanilla.  Cool on top of stove, do NOT refrigerate, the gelatin will jell.  Strain mixture and freeze in a 4-5 quart ice cream freezer according to manufacturer's directions.  Makes about 3 quarts- 24 servings.  

For an  added treat, saute 1 cup chopped pecan pieces in 1-2 tablespoons butter, do not overcook.  On aluminum foil, sprinkle with 1/8 - 1/4 cup of sugar.  Add to ice cream half way through the process.

A Good Healthy Loaf of Bread

Simplest Spaghetti Sauce Ever!

My grandma used to make spaghetti whenever we had friends over.  I used to think that she made it because my friends and I liked it, but as an adult, I figured out the TRUTH!!


Grandma made spaghetti because it was easy and cheap!  Now this recipe is not unhealthy or healthy.  In fact, it really isn't too much of a recipe.  It is just a round about way I go about making a sweet spaghetti sauce. (And know that it is a fairly sweet recipe, even without the sugar.)

Dice or mince half an onion and half a bell pepper.  Put them in a pan and cook them until soft. You can caramelize or whatever they do on cooking shows, but my main purpose is that I don't have crunchy spaghetti.  When I am in a hurry, I sometimes even boil them.  Pour off excess water if you want.

Next, add a pound of ground beef (or two if you like) and brown it, chopping it as you go so that you have loosemeat. 

Then, add one jar of spaghetti sauce. I like traditional and usually buy the cheapest thing on the shelf, but I have used others (mostly by mistake), but enjoyed my spaghetti just the same!  

Finally, add about a quarter cup of sugar (maybe a bit more). You can also choose to omit this step if you would like. Sometimes, I forget.

*****Note:  You can add anything you want to this sauce. I have added the following to my sauce on various occasions: carrots, celery, mushrooms, and probably other stuff I can't actually think of at the time of this post.  (Oh! Garlic and cheese!)

*****Another note: I have also subsituted turkey burger, loose soy burger, and Italian sausage for the ground beef.

*****The last note, I promise: Sometimes, I don't get my veggies soft before I add the meat.  On these occasions, I just let them cook in the sauce a bit longer.

Patti LaBelle's Macaroni and Cheese

Now I don't use this exact recipe, but I always need it to get started. 


Ingredients
  • 1 tablespoon vegetable oil
  • 1 pound elbow macaroni
  • 8 tablespoons (1 stick) plus 1 tablespoon butter
  • 1/2 cup (2 ounces) shredded Muenster cheese
  • 1/2 cup (2 ounces) shredded mild Cheddar cheese
  • 1/2 cup (2 ounces) shredded sharp Cheddar cheese
  • 1/2 cup (2 ounces) shredded Monterey Jack
  • 2 cups half-and-half
  • 1 cup (8 ounces) Velveeta , cut into small cubes
  • 2 large eggs , lightly beaten
  • 1/4 teaspoon seasoned salt
  • 1/8 teaspoon freshly ground black pepper
Directions
Preheat the oven to 350 degrees F. Lightly butter a deep 2 1/2-quart casserole.

Bring the large pot of salted water to a boil over high heat. Add the oil, then the elbow macaroni, and cook until the macaroni is just tender, about 7 minutes. Do not overcook. Drain well. Return to the cooking pot.

In a small saucepan, melt eight tablespoons of the butter. Stir into the macaroni. In a large bowl, mix the Muenster, mild and sharp Cheddar, and Monterey Jack cheeses. To the macaroni, add the half-and-half, 1 1/2 cups of the shredded cheese, the cubed Velveeta, and the eggs. Season with salt and pepper. Transfer to the buttered casserole. Sprinkle with the remaining 1/2 cup of shredded cheese and dot with the remaining one tablespoon of butter.

Bake until it's bubbling around the edges, about 35 minutes. Serve hot.

Zaxby's Chicken Recipe

Now Zaxby's chicken is great and wonderful, but their Zalads are what I really miss.  So I went to their website and here is what is on each Zalad. 

The House: Mixed greens, red cabbage, carrots, cucumbers, roma tomatoes, cheddar and Jack cheese, fried onions, and Chicken Fingerz or grilled chicken, with Texas toast.

The Caesar: Mixed greens, Parmesan cheese, bacon, croutons, and Chicken Fingerz or grilled chicken.

Chick Fil A Lemonade AKA Basic Lemonade

It is important to note that restaurants typically use GMO foods in their recipes.  It offers control for the flavor.  I say that to say this: Real lemons vary in their degree of sweetness; therefore, the amount of sugar needed will vary as well.  So, having said that, here is a recipe that I found.

Chick Fil A Brownies

1 cup butter, melted
1 cup flour
1/2 teaspoon baking powder
1/2 cup milk
1 cup chopped walnuts
1 (14 ounce) can sweetened condensed milk
2 cups sugar
2/3 cup cocoa
2 eggs
3 teaspoons vanilla
1 (12 ounce) package chocolate chips

Directions:
Preheat oven to 350 degrees.

Combine butter, sugar, flour, cocoa, baking powder, eggs, milk, and 1 1/2 teaspoon of vanilla; beat well. Stir in nuts. Spread into a greased and floured 13 x 9 inch pan. Bake 40 minutes.

Just before brownies are done, melt chips in a saucepan with 1 1/2 teaspoon vanilla and condensed milk. Spread fudge mixture over hot brownies. Cool. Chill and cut into bars. (The icing cools very quickly, so if you want to add swirls or fork lines to the top of the brownies work quickly! :).

Chick Fil A Shakes

I absolutely adore Chick Fil A!  We don't really have one near me so I need to improvise.  I already posted their chicken recipe.  Now for shakes!  (Next up, the brownies and lemonade!) And OMG!  I was able to find the recipe for the banana pudding shake!  Even when I lived just minutes from a Chick Fil A, I would be sad because this item is seasonal!  Score!

Buffalo Wild Wings Recipes

I love hot wings!  So I have rounded these up from around the internet.  If this is your copyright work, let me know and I will remove it immediately.  I have seen these recipes in several places so I just assume it is ok to post them.  (This is another notebook moment!)


Parmesan Garlic

  • 1/2 cup butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/2 cup parmesan cheese, grated

Spicy Garlic

  • 1 Cup Frank’s cayenne pepper sauce
  • 1/3 Cup vegetable oil
  • 1 Teaspoon granulated sugar
  • 1 Teaspoon garlic powder
  • ½ teaspoon course ground black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon Worcestershire sauce

Medium Wing Sauce

  • 1 cup Frank’s cayenne pepper sauce
  • 1/3 cup vegetable oil
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Worcestershire sauce
  • 1/8 teaspoon coarse ground black pepper

Hot Wing Sauce

  • 1 Cup Franks cayenne pepper sauce
  • 1/3 Cup vegetable oil
  • 1 Teaspoon granulated sugar
  • 1 ½ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon Worcestershire sauce
  • 1/8 Teaspoon coarse ground black pepper
  • 2 Teaspoons water
  • 2 Teaspoons cornstarch

Blazin’

  • 6 fresh habanero peppers (with seeds)
  • 5 lemon drop peppers (or other small hot pepper)
  • 8 jalapenos (with seeds)
  • 2-3 garlic cloves
  • 2 cups white vinegar
  • 1/4 teaspoon ground oregano
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon mustard powder
  • fresh ground black pepper
  • salt

Mango Habanero

  • 2 cups Mango Nectar (found in your local grocery store)
  • Any habenero hot sauce.  I recommend El Yucatan.  The amount is up to you, depending on how spicy you like your wings.
  • 1 Tbsp corn syrup. (sugar works too)
  • 1/4 cup Frank’s cayenne pepper sauce
  • 1/3 cup melted butter

Asian Zing

  • 2 teaspoons cornstarch
  • 4 teaspoons rice wine vinegar
  • 1/2 cup corn syrup
  • 1/3 cup sugar
  • 1/4 cup chili-garlic sauce (sriracha!)
  • 1 tablespoon soy sauce
  • 1 teaspoon lemon juice
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder

Carribean Jerk

  • Tablespoons margarine
  • 2 Tablespoons minced onion (white and light green parts only)
  • 1 Cup water
  • 3/4 Cup ketchup
  • 1/2 Cup plus 2 tablespoons dark brown sugar
  • 1/4 Cup apple cider vinegar
  • 2 Tablespoons white distilled vinegar
  • 2 Tablespoons Frank’s cayenne pepper sauce
  • 2 Teaspoons ground black pepper
  • 2 Teaspoons Worcestershire sauce
  • 2 Teaspoons lemon juice
  • 1-1/2 Teaspoons cayenne pepper
  • 1 Teaspoon dried parsley flakes
  • 1 Teaspoon cornstarch
  • 1/2 Teaspoon salt
  • 1/2 Teaspoon garlic powder
  • 1/2 Teaspoon dried thyme
  • 1/4 Teaspoon onion powder
  • 1/8 Teaspoon ground clove
  • 1/8 Teaspoon ground nutmeg
  • 1/8 Teaspoon ground allspice
  • 1/8 Teaspoon rubbed sage

Cooking Instructions:

Heat shortening in your fryer to 350 degrees F.  Fry wings for 10-12 minutes, or until light brown. Remove wings and drain on a rack or paper towels briefly.  After draining wings place wings in a plastic container with a lid. Add 1/4-1/3 cup of your sauce of choice to the container. Replace lid and shake well to coat wings.  Pour wings out onto a plate and add celery on the side, plus ranch or bleu cheese dressing for dipping.

Wendy's Frosty Recipes

I am an ice cream freak! It really doesn't matter what type as long as it doesn't have nuts and is not a strange color like orange, blue, or rainbow. You cannot imagine how excited I was to find these copycat recipes for Wendy's Frosty only healthier!

There are three different recipes. Two are linked through Pinterest. (Two clicks to the recipe, but it is only fair to the person who developed the recipes.) I will likely use the seconds one as it requires the simplest ingredients, but the protein powder is likely a more advantageous addition than the cocoa powder.
