Ice Cream Recipes (a collection of links)

Anyone who knows me knows that I feel a certain affection for ice cream!  However, I am trying to become more cognizant of what is in my food.  I want to have more control over what goes into my body, even if it isn't healthy.  Additionally, having to prepare these unhealthy treats may deter me from snacking on them so mindlessly.  I also will have more control over my portions as well!  All the more reason to make your stuff at home!

Frozen Custard

Vanilla Lactose-Free Frozen Custard From a Facebook Friend

2 Cups Sugar
2 Envelopes Unflavored Gelatin
8 Cups Lactaid Milk-(We use the one in the 
    blue carton) 
6 Beaten Eggs
3 Tablespoons Vanilla

In  a large saucepan combine sugar and gelatin.  Stir in 6 cups of milk.  Cook and stir over medium heat until mixture almost boils and sugar dissolves.  Stir about 1 cup of the hot mixture into beaten eggs; return all to saucepan.  Cook and stir for 2 minutes more.  DO NOT BOIL or eggs will cook.  Stir in the 2 cups of lactaid and vanilla.  Cool on top of stove, do NOT refrigerate, the gelatin will jell.  Strain mixture and freeze in a 4-5 quart ice cream freezer according to manufacturer's directions.  Makes about 3 quarts- 24 servings.  

For an  added treat, saute 1 cup chopped pecan pieces in 1-2 tablespoons butter, do not overcook.  On aluminum foil, sprinkle with 1/8 - 1/4 cup of sugar.  Add to ice cream half way through the process.
